I boiled two beets, leftover from my experimental chocolate cake, for dinner tonight...and became entranced by the colors. I was fascinated to cut them open and reveal the flesh, so darkly maroon as to seem black, and I reveled in the brighter crimson staining my fingers as I peeled, quartered, and enjoyed. Roasting success! With adorable less-than-inch-wide chestnuts purchased yesterday from Livengood's produce stand at RTM, roasted about 12 minutes at an oven temp that rose from about 340*F to about 390*.

The nutmeats are smoother than the commonly more-sizeable instances, but just as sweet. My honor in the kitchen is vindicated.
